Sensory     Cauliflower flavour, no off tastes or smells

FINISHED PRODUCT    GENERAL INFORMATION
Chemical specs.     Only registered chemicals pre-harvest to be used in accordance to Food Standards Code and Maximum Residue Limits (MRL).
Shelf life     Shelf life = 10 days prior to brining
Microbiological specifications     Further processing (cooking) required
Customer cut specification     19 x 19 x 19mm dice
Brine concentration     Salinometer reading 40º or above
Weight     Cauliflower packed at 125kg per barrel raw dry weight.
Process handling     Barrels are topped up with brine 7 times during the stabilization process.
